Easy Halloween Cupcakes

Spooky, Halloween themed treats are the perfect thing to help get everyone in the Halloween spirit. Unfortunately, unless you are a whizz in the kitchen, making some yourself can be a little tricky, but fear not because with these easy cupcakes you will be setting the mood without hassle

These Halloween cupcakes are easy to make with hardly any cleanup. Whether you are baking for a party, friends or school; these cupcakes are perfect for you.

Ingredients
Cupcakes
• 2 cups sifted all-purpose flour
• 1 + ¼ cup white sugar
• 1 tablespoon baking powder
• 1 teaspoon salt
• ½ cup softened butter
• 1 cup milk
• 1 teaspoon vanilla extract
• 1 teaspoon orange food coloring (if you don’t have this you can mix red and yellow coloring until you get the desired color)
• 2 eggs

Buttercream Frosting and Halloween toppings
• ½ cup softened, unsalted butter
• 2 tablespoons milk
• 1 teaspoon vanilla extract
• 1 teaspoon orange food coloring (again you can mix red and yellow if you don’t have orange) or a color of your choice
• 2 cups sifted confectioners’ sugar
• Either Reese’s Peanut Butter Pumpkins (snack size), Peeps Halloween Marshmallows or Snicker Jack ‘o Lanterns to decorate the tops.

Instructions
Cupcakes
1. Preheat oven to 350 degrees F. Line a 12-count muffin pan with cupcake liners. Depending on the size of your cupcake liners, this recipe makes between 12 and 15 cupcakes.

2. In a large mixing bowl combine the sifted flour with the sugar, baking powder, and salt.

3. Add butter, milk and food coloring and vanilla essence to the dry ingredients. Beat with a hand mixer on medium speed for 3-4 minutes, occasionally scraping sides of the bowl. Add eggs, beat until combined.

4. Pour batter into the cupcake liners, filling them a little over halfway full and making sure not to overfill them, Bake in separate batches at 350F for 18-22 minutes or until a wooden toothpick inserted into the center of the cupcake comes out clean.

5. Remove from the oven and allow to cool for 10 minutes. Remove all of the cupcakes from the trays and transfer to a wire rack to cool completely. Make sure the cupcakes are completely cool before you ice them.

Frosting
1. Using a mixing bowl and with a hand mixer, beat the butter until smooth.

2. Add the confectioners’ sugar, vanilla, food coloring and mix on low until well combined. Then, while still mixing on low, slowly add the milk to the frosting.

3. Finally, cream the mixture together on medium until the frosting is well combined.

4. Frost the cooled cupcakes as desired and decorate the tops with either Halloween themed treat.
